You're the Boss Blog: The Money Shot: Working Nights

We recently asked small-business owners to send us photographs that capture the soul of their businesses in a single shot.

This one comes from Steven Lawrence of Fried & Fabulous in Madison, Wis.:

A frosty, 28-degree temperature greeted me as I parked, and chipped away the ice mountain formed by the snowplow in front of my trailer. Open until 3 am on weekends, the thermometer would plummet to 11 degrees on February 15, not counting the 23 mph wind-gusts by the time the Fried & Fabulous serving window closed. In spite of this typical, frigid, February weather in Madison, WI, I fry my battered comfort foods fresh-to-order, and serve them piping hot. Hungry potential customers would be waiting for me, so I came prepared, and dressed with many layers to guard against a long, cold night of working outside. I stand outside my food trailer, because I believe great customer service is equally important to great food. Outside, I can act as server/cashier, but can also approach people; giving them free samples, offering my sales pitch, menu guidance and maybe a joke. Staying inside near the fryer might be a little warmer, but I feel it limits me to just taking orders and making change. Successful entrepreneurs don’t let anything get in their way. So, no matter the weather, I’m providing a fabulous food experience to my customers, which is the soul of my business.
